Ingredients
- 2-4 pitted dates (if not soft, soak in water for 10 minutes and drain)
- 1/2 cup raw cashews
- 2 tablespoons Premium Culinary Matcha
- 1/4 cup almond butter (cashew and peanut butter works too)
- 1/4 cup shredded coconut (unsweetened)
- 1/4 cup raw cacao nibs (optional)
- 1 tablespoon honey or maple syrup (optional)
- Splash of plant-based milk or water if needed (optional)
- Pinch of salt
Instructions
- In a food processor or blender, combine the pitted dates, raw cashews, matcha powder, almond butter, shredded coconut, cacao nibs (if using), honey or maple syrup (if using), and a pinch of salt.
- Pulse the ingredients until they are well combined and the mixture starts to stick together. You should have a slightly sticky and crumbly texture.
- Take about a tablespoon of the mixture and roll it between your hands to form a ball. Repeat this process with the remaining mixture.
- If the mixture is too dry and doesn't hold its shape, you can add a teaspoon of almond butter or honey to the mixture and blend again.
- Place the matcha raw energy balls on a tray or plate lined with parchment paper, and refrigerate them for at least 30 minutes to firm up.
- Once chilled, the energy balls are ready to enjoy! You can store them in an airtight container in the refrigerator for up to one week.
Optional variations
- For an extra crunch, roll the energy balls in crushed nuts or toasted sesame seeds.
- Add a teaspoon of vanilla extract or your favorite flavored extract for additional flavor.
- If you prefer sweeter energy balls, you can increase the amount of honey or maple syrup.
Matcha raw energy balls are a versatile snack and can be enjoyed as a quick pick-me-up, pre-workout snack, or a healthy dessert. Feel free to experiment with the ingredients and adjust the sweetness or texture to suit your taste preferences.
